Salads are nutritional and can be the great source of vitamins, proteins, carbohydrates, minerals and lot more. They are considered as light meal and much more than an appetizer. Their preparation mostly involves vegetables (leafy vegetables) and sometimes fruits. The dressing forms the crux of it, which differentiates the taste of different salads. Occasionally it is prepared with meat, fish cheese or nuts, which makes it a high calorie-content. Basically these delicacies are healthy with low calories, most commonly found on every dining table in US

The most commonly consumed green salad consists of variety of vegetables like lettuce, spinach or arugula. This is not all, as the recipes can also be seen with tomato, cucumber, peppers, mushrooms, onions, spring onions, and red onions, carrot and reddish. We come across people who love to try different things in their daily diet they make different combinations in the same dish to give it different taste and flavor. For this reason we find green salads complimented with pasta, olives, cooked potatoes, croutons, beans, rice meat, cheese and fish. That is why salad is not just any mixture of leafy vegetables but needs proper garnishing and serving with of course the right mix of ingredients.

There are wide array of sumptuous chicken and summer salad recipes with tantalizing taste and mouth-watering aroma.

Looking for a recipe for Italian easter pie?

I’m looking for a recipe for Italian easter pie,I know there is
ham, pepperoni, sausage, salami and different cheeses in it, it’s very
dense and very good. Does any one have a recipe for this?

Answer
Italian Easter Pie

Easter Pie has many different names and even more recipes, depending on the section of Italy in question. To learn more, please read Mark’s article “Italian easter pie.”

Crust

2 cups all purpose flour
3/4 teaspoon salt
2 sticks unsalted butter, cut in cubes
2 eggs
Filling

6 eggs
salt and pepper to taste
8 ounces farmer cheese, fresh soft cheese or ricotta cheese click for note
2 ounces shredded mozzarella cheese
3 ounces shredded ham
3 ounces shredded salami
3 ounces shredded prosciutto
METHOD

Crust: Mix flour and salt and place in bowl of a food processor. Add butter cubes, one at a time to dough. After each cube pulse food processor just enough to work in butter. Do not overwork or dough will toughen. Dough should resemble coarse meal.

Add eggs. Pulse dough until it comes together in a ball. Cut dough in half so that one half is slightly bigger than the other. The smaller half will be the top crust. Wrap each in plastic wrap and rest dough for an hour in fridge. (If you don’t have a food processor, work in butter with a dough cutter or a fork and use your hands to integrate eggs.)

When dough is almost done resting, preheat oven to 350°F. Make filling: Beat eggs with salt and pepper. Blend cheese into eggs. Shred or slice meat, or put in food processor for a finer textured pie and add to egg/cheese mixture.

Roll out larger piece of dough on a floured board until it will fill a 9-inch pie shell. Add filling. Roll out smaller piece of dough until it will cover top. Crimp around edges to seal it.

If you’d like, you can brush the top with an egg wash, (beaten eggs). This will give it a sheen when it bakes. Finally, poke holes or slits in the top crust to allow the steam to vent.

Cook in preheated 350°F oven or 45 minutes.

Yield: 1 pie

Looking for some healthy and easy ground beef recipes that do not require a lot of time to make? Below are 3 delicious ground beef recipes that are filling and real crowd pleasers.

Just because you are cooking with ground beef, does not mean it has to be unhealthy. Most of the ground beef you find in supermarkets today is loaded with fat, cholesterol and hormones, but more and more supermarkets are starting to provide healthy organic meats to consumers, so hopefully you should be able to find healthy ground beef in your area.

To make the following recipes even healthier try and use all organic and low sodium ingredients.

If you happen to live near a Trader Joe’s, by all means shop there. The prices are fantastic and they carry a variety of healthy organic meats and other fine products.

THE RECIPES:

EASY SALISBURY STEAK RECIPE

Here is a little tip to keep in mind as you are making this delicious ground beef recipe. There is a chance that your ground beef steaks can fall apart while cooking. To prevent this from happening, form your steak patties and put them in the refrigerator for 30 minutes or so before you start cooking. This will help hold your steaks stay together.

Ingredients:

1 1/2 pounds lean ground beef

1 egg

1 tablespoon Worcestershire sauce

1 small onion finely chopped

1 garlic clove chopped

1 tablespoon montreal steak seasoning

Salt and Pepper to taste

3 tablespoons of extra virgin olive oil

1 small package of freshly sliced portobello mushrooms or by them whole and slice yourself

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups beef stock

Directions:

1. In a large bowl combine the ground beef, egg, garlic, onion, steak seasoning, Worcestershire sauce and salt and pepper. Mix well with your hands. From the mixture, make steak shaped patties that are about 2 inches thick.

2 Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the ground beef patties and cook about 4 minutes per side until the outside of the steaks are nicely browned and the juices run clear. Remove the steaks and cover with foil to keep them warm.

3 Add the rest of the olive oil along with the butter to the same pan. Add your mushrooms and then cook over medium heat until they are tender. Approximately 5 minutes. Season the mushrooms with salt and pepper to taste.

4. Add the flour to the mushrooms, mix and cook for about 2 minutes. Slowly add in your beef stock. Stir and cook until your sauce has thickened.

5. Pour gravy over steaks and serve.

EASY ITALIAN STYLE MEATLOAF RECIPE

I grew up in an Italian Family and I cannot think of a better way to cook meatloaf. Enjoy this delicious ground beef recipe using fresh italian herbs and garlic.

Ingredients:

1 1/2 pounds lean ground beef

2 eggs

1 7 ounce jar roasted red peppers chopped

1 onion chopped

2 cloves of garlic chopped

1 cup of bread crumbs

1 teaspoon of salt

1/2 teaspoon of freshly ground black pepper

1 tablespoon balsamic vinegar

1 tablespoon Worcestershire sauce

1/2 cup grated Parmesan Cheese

2 tablespoons chopped fresh basil

1 tablespoon chopped fresh parsley

2 cups of prepared tomato sauce

2 tablespoons extra-virgin olive oil

Directions:

1. Preheat your oven to 350 degrees F.

2. Heat a medium sized saute pan over medium heat and add 1 tablespoon of olive oil. Add your onion and garlic and saute until soft. Remove and set it aside on a plate to cool.

3. Grab yourself a large mixing bowl.

4. Add the cooled onions and garlic along with the the rest of your ingredients, except the tomato sauce, and combine. Mix together well with your hands and form into a loaf and add it to an oiled oven safe tray. Top the loaf with 1 cup of the prepared tomato sauce. Make certain that you spread the tomato sauce evenly over the top of the loaf.

5. Bake for about 1 hour or when the internal temperature of the meatloaf reaches 160 degrees F. Remove from the oven and let it sit for about 5 minutes. Slice it up and serve.

Heat the remaining tomato sauce if desired and use for dipping.

GREEK STYLE HAMBURGER RECIPE

For our last recipe why not make some delicious burgers? The preferred method for cooking these burgers is on the grill, but they will still be quite tasty if fried on the stovetop.

Greek Style Hamburger Ingredients:

1 pound of lean ground beef

1/2 cup crumbled feta cheese

1/2 cup chopped greek olives

1 small red onion chopped

3/4 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

1 package of hamburger rolls or pita bread

Hamburger Sauce Ingredients:

1 (16 ounce) container low-fat plain yogurt

1 tablespoon chopped fresh mint leaves (more or less to suit your taste)

1 tablespoon chopped fresh parsley (more or less to suit your taste)

1 clove of garlic minced (add more or less to suit your taste)

1 tablespoon of olive oil

2 teaspoons of lemon juice

1/2 cup peeled, seeded and finely diced cucumber

Sauce Directions:

Prepare the sauce for your burgers first and put in the fridge until your burgers are done.

1. In a mixing bowl, combine your olive oil and lemon juice.

2. Now add in your yogurt making sure that you mix it well with the olive oil.

3. Add your garlic, cucumbers, parsley and mint leaves and stir well.

Burger Directions:

1. In a large skillet, heat 1 tablespoon of olive oil over medium-low heat. Add the chopped red onions and cook until tender, about 5 minutes. Put the onions aside into a large mixing bowl and allow them to cool.

2 To the same mixing bowl, add your ground beef, feta cheese, olives, oregano, salt and pepper and combine well.

3. Form hamburger patties to desired thickness.

4. Fry your burgers in the same skillet as the onions, or cook on the grill to desired doneness.

5. Spread the prepared sauce on the rolls or inside a pita.

6. Add burgers and enjoy!

There you have it. Three healthy and easy ground beef recipes that any home cook can prepare. I really hope you enjoy these recipes. Remember to use all organic ingredients if at all possible. Happy Cooking!

This Question is for the real “Italian Cooks” out there:Is Lasagna without noodles a real Italian Recipe?

I disagreed with Buca di Beppo about this. There Lasagna was nothing but baked ricotta cheese with sauce on it. It was not good at all. I don’t recommend eating there.
The Chef personally came to my table and told me that real Italians cook Lasagna “Without” noodles. I want to know if this is true. And yes I’m positive it was Lasagna that I ordered.

Answer
Garfield the cat told me, he wants it with noddles so
Lasagna is made with noodles, sauce, meat, ricotta cheese, and Mozzarella cheese on top.
If it doesn’t have noodles it’s not lasagna Garfield said.

January means Super Bowl parties and our easy Super Bowl recipes make it easy on the cook.

A Super Bowl party seems like a great idea, but after all the work of the holiday season, many of us don’t want to put out all that effort again. On the other hand, buying everything you need to feed a crowd can be expensive.

Here are some easy Superbowl recipes, some of which can even be made ahead.

Garlic Apricot Chicken Wings

12 whole chicken wings (about 2 pounds) or 24 divided wing pieces
3 cloves garlic, minced
1/3 cup apricot preserves

Preheat oven to 350ºF

Mix together minced garlic and apricot preserves.

Barbecue, bake or broil wings until almost cooked. Brush with the apricot/garlic mixture and continue cooking until tender.

Make Ahead Notes:
Bake the wings earlier in the day, then brush with the sauce just before you need them and pop them into the oven again to finish up.

Blue Cheese Dip

8 ounces Roquefort or blue cheese, softened and broken into small pieces
1/2 small onion, grated
Juice of 1/2 lemon
1 cup mayonnaise
1/2 cup sour cream
1/2 teaspoon salt

Beat all ingredients together until smooth. Cover and refrigerate for 2 hours or until ready to use. Serve with chips, raw vegetables or crackers for dipping.

Make-Ahead Notes:
This blue cheese dip should be refrigerated for at least two hours to allow the flavors to meld together well. Nothing says you can’t prepare it earlier though and refrigerate it until needed.

Hot Filled Bread

Another recipe with lots of tasty variations.

Take 1 long loaf of French or Italian crusty bread and cut it into fairly thick slices. Spread each slice on one side with your choice of filling. Put the loaf back together and wrap in aluminum foil.

Bake at 400ºF for 10 minutes. Open the foil and bake for a further 5-7 minutes until the crust is crispy and the cheese is hot.

Make Ahead Notes:
Make the fillings earlier in the day, then just spread them on the bread when you are ready to pop them in the oven.
The bread can also be filled, wrapped well with foil and frozen until ready to bake. Just thaw first and bake for a few minutes longer to make sure the filling gets hot.

Fillings –
For each of these filling recipes, mix all the ingredients together and spread on bread slices. Follow the recipe above to bake.

Garlic and Herb Bread:
Traditional garlic bread at its finest.

3 cloves garlic, crushed
1/4 to 1/3 pound butter
3 tablespoons parsley, chopped
pinch of mixed herbs (chopped chives, basil, or rosemary, whatever you prefer)

French Onion Bread:
1 – 8 ounce package cream cheese, softened
1 envelope onion soup mix

Ham and Blue Cheese Bread:
1/4 pound butter
1 tablespoon chopped parsley
2 ounces of ham, finely chopped
1 ounce blue cheese, crumbled

Cheese and Chive Bread:
1/4 to 1/3 cup butter
1 – 8 ounce package cream cheese
3 tablespoons parsley, chopped
3 tablespoons chives, chopped
3 tablespoons other herbs, chopped if desired (or use more chives)
freshly ground black pepper

Stuffed Mushrooms

1 pound large mushrooms
2 tablespoons olive oil, divided
1/2 teaspoon pepper, divided
1/8 teaspoon salt
1 small red onion, finely chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
4 ounces feta cheese, crumbled
1/4 cup sun-dried tomatoes packed in oil, drained and chopped
1/4 cup fresh chopped mint or 1 teaspoon dried
1 teaspoon grated lemon peel

Preheat oven to 400ºF.

Rinse mushrooms. Pat dry with paper towels. Remove stems. Combine mushroom caps with 1 tablespoon oil, salt and 1/4 teaspoon pepper. Place mushrooms stem-side-up on nonstick baking sheet.

In a skillet, heat 1 tablespoon oil over medium heat. Add onion and cook 5 minutes. Add spinach. Cook until dry. Remove to a bowl. Add feta cheese, sun-dried tomatoes, mint, lemon peel and 1/4 teaspoon pepper. Mix well. Spoon into mushrooms. Bake 8-10 minutes until mushrooms are tender and stuffing is hot.

what french guiana cake recipe should i make that can feed 30 college students?

help PLEASE i need to make either a french or french guiana recipe this thursday! it needs to be able to feed 30 colleagues! if possible i could do a recipe for 6 and do it 5 times! but what kind of recipe is simple enough to do over 5 times!

Answer
Found this recipe at AFTouchcuisine.com that sounds easy to make. You can double or triple it and bake it in a sheetcake pan. Just extend the time and test the center of the cake.

HAZELNUT SOFT CAKE FROM FRENCH GUIANA

Ingredients :
Hazelnut soft Cake, serves 6 to 8 people
200 grams (7 ounces) of roasted hazelnuts (turn the nuts into powder in a mixer, put the powder into a heated frying pan without any fat, stir continuously until you get a light-brown colour. Let cool and keep aside)
5 eggs
120 gr (4 ounces) of sugar
a piece of lemon peel
icing sugar

Direction :
Clarify the eggs.
Blanch the yolks with 120 gr (4 ounces) of sugar (blanch: whip until the mixture becomes white).
Whisk up the whites and at the end, mix in the remaining sugar (80 gr) and carry on whisking for 30 seconds.
Lay the whites on top of the yolks and gently mix by lifting with a spatula. When done, mix in the roasted hazelnut powder.
Poor the mixture into a a non-adhesive sponge-cake baking-tin (Tefal or Flexopan).
Bake for 35-40 mn at 180° C. As usual, probe the cake with the tip of a knife which should come out hot and dry.
10 mn after taking it out of the oven, remove it from the baking-tin, let it cool on a grille and powder it with icing-sugar.

Loads of little things can complement your hazelnut soft Cake :
A nice warm chocolate-sauce, custard with little bits of toasted coffee, that same custard flavoured with liquorice or even sauterne wine or acacia honey… A real love poem !

What is the name of this italian recipe and where can i find it?

My aunt always made this italian appetizer or dish…

They where rice balls with ground beef in the middle and bread
crumbs on the outside. She is a true italian so any ideas help!!?? Im clueless…

Answer
I think this is what you are looking for, they are delicious. They can also be made with cheese in the middle

Arancini

INGREDIENTS

3½ cups (875ml) chicken stock
40g butter
1 small onion, finely chopped
1½cups (300g) arborio rice
½ cup (125ml) dry white wine
1/3 cup (25g) grated parmesan, plus 1 tablespoon extra
2 eggs
1 tablespoon olive oil
60g button mushrooms, finely chopped
1 garlic clove, crushed
200g lean beef mince
¼ cup chopped parsley
1 cup (70g) fresh breadcrumbs
rice bran oil, to deep-fry

METHOD

1. First make risotto by heating chicken stock in a saucepan, until simmering. Keep hot. Melt butter in a large saucepan on medium heat. Add onion and cook for 3 minutes, stirring, until softened. Add rice and stir for 1 minute, until translucent. Add wine and stir until evaporated.

2. Add one ladle of stock, stirring constantly, until absorbed. Repeat with remaining stock, one ladle at a time, stirring constantly for 15-20 minutes, until all stock is added and rice is cooked. Remove from heat and stir through parmesan and one lightly beaten egg. Season to taste. Spread rice onto a baking tray lined with baking paper to cool completely.

3. Meanwhile, heat olive oil in a frying pan on high. Cook mushroom and garlic, stirring, for 5 minutes. Add mince and cook for 5 minutes, until browned and moisture evaporates. Stir in parsley, remaining egg and extra parmesan.

4. Divide cooled risotto into 12 portions. With wet hands, take one portion in your palm and make a small well in centre to form a cup. Place 1 tablespoon of mince mixture in centre of rice. Fold over rice to enclose mixture and shape into a ball. Repeat with remaining rice portions and mince mixture. Roll balls in breadcrumbs and set aside.

5. Heat rice bran oil in a large saucepan on high until a cube of bread sizzles on contact. Deep-fry rice balls in batches for 4 minutes, turning, until golden. Drain on paper towel and serve immediately.

suppli are simular but not the same. suppli, or fried rice balls are usually just that, fried rice balls, no meat filling. When they have a cube of mozzarella put in the middle they are called suppli telefono which means telephone rice balls because the cheese strings out like a telephone cord

There is nothing as fulfilling as serving the family some scrumptious dessert after a hearty meal.

Even when guests have a meal in your house, a well-prepared dessert actually, can add a couple of feathers to your chef’s cap!

But then questions arise – are there easy dessert recipes available, which can be made with the least effort and yet can turn out delicious? What about using flour in a dessert recipe – are my guest allergic to flour? Or, will the taste of flour be too overwhelming?

There is nothing to worry, if you are looking out for easy dessert recipes which can be conveniently made without using an iota of flour. In fact, you do not even have to look for grandma’s diaries for flour-free easy dessert recipes.

Here are a few easy dessert recipes which you can try out today:

Recipe #1: Mary’s Favorite!

The banana split cake is one of the most common easy dessert recipes, which does not even need baking! (Forget your diet though!)

To prepare this delicious dessert you need, 5-7 bananas, 3 sticks butter, 1 large container of whipping cream – whipped until stiff, 1 bottle of red maraschino cherries, half-cup of crushed pecans, 2 cups crushed crackers/biscuits 1 medium can crushed pineapple along with its own juice – drain well, 2 cups powdered sugar (Icing Sugar, confectioners’ sugar) and 2 eggs.

Start by beating the eggs, 2 sticks of butter, and powered sugar for 15 minutes = mixture 1 – Set aside. Then mix 1 stick butter and cracker/biscuit crumbs. Pat this mixture into a 13 x 9-inch pan. Taking care to spread mixture 1 over crust then cover with sliced bananas. Then add the well-drained pineapple now over the bananas and then be covered with whipped cream. Now you have to sprinkle pecans over top, placing a cherry in each section of about the size you plan to serve.

One of the most popular and easy dessert recipes is ready to serve after you have refrigerated it for several hours!

Recipe #2: DeDe’s – Diet What Diet Dessert!

This is yet another easy dessert recipe which also does not require any baking.

In fact this Chocolate Éclair cake is as easy as a walk in the park (4 Extra rounds after eating this DeDe Says haha!)

All you need to do is to butter a 13 x 9-inch dish, and then line the bottom and sides with whole crackers (fewer calories) or Chocolate Biscuits (more Calories)

Next mix one 6-ounce package of instant French vanilla pudding with 3 cups of whole milk and blend for 2 minutes. Next Whip a Large container of Cream until thick and add it to the vanilla pudding. Pour an adequate layer of the mixture over the crackers/biscuits, then add another layer of crackers/biscuits, then more pudding mixture, finally topping with your crackers/biscuits.

All you need to do now is to frost with fudge icing which can also be made very easily:

Mix ¾ cup of sugar and ¼ cup of honey, 1/8 teaspoon of salt, 1/3 cup cocoa or melted chocolate and ¼ cup of milk. Then bring the mixture to a boil and cook for 1 minute, after which you remove it from heat. Then add ¼ cup butter and 1 teaspoon of vanilla flavoring.

Allow it to cool, after which you can beat until it acquires a smooth and thick texture, enough to spread over the top of the crackers/biscuits

Please refrigerate it for 24 hours before serving.

So you see, dessert recipes can be easy, simple, delicious and oh yes, calorie laden, HOWEVER, if you are making a fantastic dinner for a special occasion, then why not have a great dessert.

See you around that park; I’ll be doing those extra laps with you!

If you live anywhere near a hunter or hunting area, then chances are you are going to get some deer meat. There are some great, easy recipes besides the old, tried and true-deer chili, deer stew, deer roast with vegetables, deer stroganoff, grilled venison tenderloins or chicken fried deer steaks with gravy and mashed potatoes.

Deer Jerky

You aren’t a true deer connoisseur unless you have tried to make your own deer jerky. You don’t have to have a dehydrator; you can use your oven, set on 200-250, with a hot pad stuck in the oven door to let the moist air out. It can take anywhere from 5-10 hours, depending on how chewy you want it. You can use the meat from the ribs, the flank steaks and the scrap meat that doesn’t end up ground in hamburger or sausage for this. Keep in mind that the meat you start with, ends up about a half or two thirds less after drying. Marinate ¼ inch strips and pieces overnight, in some liquid smoke, Tabasco sauce, Worcestershire sauce, soy sauce, a little seasoning salt, garlic powder and onion powder. Next day, spread meat on wire rack, foil underneath and put in oven until done, 5-10 hours.

An easy appetizer is Venison Cherry Spread

1 pkg. of softened cream cheese, ¼ to ½ cup of dried or fresh crushed cherries or pie filing and leftover cooked venison, roast or ground, (and a few red pepper flakes if desired for heat) and spread on crackers.

Venison Roll-ups are another easy appetizer

Simply slice steaks with the grain to make thin breakfast steaks. Roll around two or three asparagus or green onions, or one of each and secure with a moistened toothpick and throw on the grill until the meat turns brown.

Venison Roast Pizza is an easy leftover meal

Get a cooked, prepared pizza dough, or use a loaf of flatbread or French bread, split. Mix 1 pkg. of softened cream cheese with a tablespoon each of: horseradish sauce, ranch dressing, Italian dressing and spread on pizza dough or bread. Top with leftover venison roast or cooked ground venison, onions, pepper, olives or mushrooms, as desired, top with Italian blend or mozzarella cheese, bake at 350 until golden brown and cheese melts.

Crescent roll Venison Lasagna pie

Take 2 rolls of crescents and open on a pizza pan or (large round baking pan), spread with tips outward, like a sun shape. Mix together: ½ pound of venison, ½ pound sausage, tomato sauce, onions, peppers and green and black olives, and one pack of dry ranch dressing, prepared as instructions. Once mixed, place in the center of the “Sun”, top with shredded cheese, fold all the points towards the middle, and bake at 375 until golden and inside is bubbly.

Venison Cottage Cheese Pie

Mix 1 pound of ground venison, mushrooms and onions together and put in a 9″ frozen pie shell. In a separate bowl, beat 2 eggs and add 1 cup of cottage cheese and pour over the top of the meat mixture. Bake at 350 for 30-40 minutes until set, or top mixture turns golden brown.

Whether you’re an avid hunter or just someone who enjoys the offerings of a hunter you are sure to impress somebody with these easy venison recipes.

I need a good recipe for french bread and Cinnamon raisin for a bread maker. Any suggestions?

Does anyone have a recipe for french bread or/and cinnamon raisin made in a bread maker? Thanks so much!
cookingkay1955
Thanks for the great recipes. Lazy sunday can’t wait to get started. Just love cinnamon raisin bread.

Answer
I have lots in my cooking group
http://groups.msn.com/CookingWithKay

Cinnamon Twist Bread
Yield: 1 pound loaf

6 oz buttermilk or powder
3 tb honey
1 egg
2 tb butter
2 1/4 c bread flour
1 tb sugar
1/2 ts ground cinnamon
1/2 ts salt
2 ts yeast

Put all the ingredients in the pan. Start the bread machine. Cover a
bread board with plastic wrap and dust with flour. When the machine
stops kneading, remove the dough from the container with your hands,
leaving the bread pan in place in your machine and close the lid.
Place dough on floured board. Dust top of dough and your hands with
flour. Pat dough into a 6″x 10″ rectangle. Combine 2 teaspoons
cinnamon and 1 tsp. sugar. Spoon mixture in three long rows, down the
dough. Roll dough into a fat cylinder, left to right, then fold it in
half twisting the ends together.
Place the dough, ends down, back in the bread machine, close the lid
and continue the cycle.

be sure to keep the machine closed while you are putting the cinnamon
on so any heat in the machine stays in. Work as quickly as possible
because the machine still ticks off the time while you’re doing it.

I use powdered butter milk, 3 tb and 6 oz warm water. I have left
out the egg and reduced the flour to 2 c with great success. I have
also replaced the honey with sugar. I have also reduced the amount
of sugar in the dough to 2 tb and found it to be sweet enough. In
other word, the basic recipe is great, but modifications don’t seem
to bother it. Remember, you will be playing with the dough, so don’t
worry if the dough is sticky at first, you will be adding some flour
when rolling it out.

French Bread For The Bread Machine

1 1/2 Cups water
3 1/4 Cups bread flour
1 1/2 Tablespoons sugar
1 1/2 Teaspoons salt
1 Tablespoon yeast

Add ingredients to bread pan in order recommended by manufacturer

Cinnamon Raisin Bread
Makes a 2-pound loaf.

1 1/2 cups water
2 tablespoons margarine
4 cups white bread flour
1/4 cup granulated sugar
2 teaspoons salt
1 1/2 teaspoons ground cinnamon
2 1/4 teaspoons active dry yeast or bread machine yeast
3/4 cup raisins

Remove bread pan; attach kneading blade. Place all ingredients, except raisins, in bread pan in order listed. Insert bread pan, close lid and plug in. Select Sweet Bread cycle. Start. Add raisins at the beep, about 32 minutes after starting. Bread will be done baking in the number of hours indicated

I like this one also

Challah

1 lb
1.5 tsp yeast
1 3/4 cup + 2 Tbsp bread flour
1/4 cup sugar
1/2 tsp salt
2 Tbsp + 1 tsp veg. oil
2 egg yolks
2/3 cup water

1 1/2 lb

2 1/4 tsp yeast
2 1/4 cup + 1 Tbsp bread flour
1/4 cup + 2 Tbsp sugar
1/4 tsp salt
3 1/2 Tbsp veg oil
3 egg yolks
1 cup water

People are busier today than ever in history. People do more and more, which compensates for the speed modern technology brings to tasks. What suffers is home life. People have less energy to spend around the house. That includes meals. Making dinner recipes easy has become a holy grail. It’s nice to know there are a lot of ideas around for quick meals.

It was all by hand cooking in the old days. Grinding meat into casings was the way to make sausage. When they ate pasta they used home made noodles and home made sauce made from tomatoes and other ingredients. Cooking was an all day affair. With more at home spouses, this was hard but not out of the question. But as people began to realize they wanted more from life than cooking and cleaning every day, more and more pre-packaged and pre-prepared foods began to appear. Cake baking, for example, slowly converted from mixing flour, eggs, vanilla, milk, carefully melted chocolate and many many other ingredients to opening a box and mixing in some eggs and milk. It’s now a simple matter to bake a cake. Far less time is required before a cake can be enjoyed. Change has happened.

There are lots of places to find out how to cook more quickly. The television cooking shows are more popular than ever. Gone are the days of the Galloping Gourmet getting drunk on cooking Sheri while Julia Child droned on about fancy French meals. There’s more focus in today’s shows on cooking for the rest of us. It’s more 20 minute meals and foods that can be prepared in under a half hour. This isn’t just hot dogs or scrambled eggs. The focus is delicious meals that appear to take a lot longer to make than they really do.

Pre-packaged and ready made foods are a lot better than they were, too. Most supermarkets have delis where hot meals are made. It’s a combination of home made and take out. Freeze these meals for eating another time, too. That’s another idea. Use the weekend to cook, then freeze the meals to eat during the week when life is busier. Many foods including lasagna are actually better reheated.

Even today it’s possible to eat well without eating out daily. There are plenty of places to learn about making dinner recipes easy. Bon appetite.

While coffee-based beverages remain as popular as ever, more Americans are looking for a do-it-yourself way to enjoy high-end coffee bar style cappuccino and espresso drinks at home. Fortunately, there are many affordable products on the market to assist the home brewing enthusiast in their quest for the ultimate coffee concoction. Regardless of which product you choose, there are endless recipes and combinations of ingredients to literally spice up your daily infusion.

First you need choose the basis of your beverage: coffee or espresso. Coffee can be drip-brewed, percolated, instant or cold-pressed. Any of these methods are very inexpensive. An espresso-based beverage is more likely to satisfy the sophisticated palette of the coffee connoisseur. To do this at home however, requires more of an investment in the brewing equipment. Real espresso machines cost upwards of $1,000. An affordable and popular alternative are the single-serving type of machines such as the Tassimo, where you invest in the machine and purchase pre-portioned packages of espresso varieties to brew a serving at a time.

Still confused about the difference between coffee and espresso? Espresso is a method, first originated in Italy, of extracting flavor from the heart of the coffee bean. The technique employs a pump-driven machine to force hot water through the ground coffee beans at high pressure in a short time frame — usually between 20 and 35 seconds. The amount of water used is only about ¾ of an ounce, and the resulting taste is described as smooth, thick, rich or sweet. So the obvious differences between coffee and espresso are 1) the amount of water used and 2) brewing or pressing time. Coffee is generally brewed for 4 to 6 minutes depending on the method and individual preferences.

Cappuccino is espresso mixed with equal parts of steamed and frothed milk. If you don’t purchase an espresso machine with milk-steaming capabilities, you will have to steam and froth your milk the old-fashioned way — on a stove. The frothing process involves skimming and stirring the hot milk. To layer the milk and espresso, allow the freshly frothed milk a moment to rest and separate (foam on top and milk on the bottom). Pour the steamed milk into your cup first, then pour in the espresso, and top it with the frothed milk using a spoon.

The creative possibilities go on from there. One of the most popular twists on the cappuccino is adding a sprinkle of powdered cocoa or cinnamon. Other combinations take their inspiration from favorite foods such as traditional desserts or candy bars. Try these super-easy recipes or experiment with making your own!

Milky Way Cappuccino– 2 shots espresso, 1 shot chocolate syrup, 1 shot caramel

Java Chai Espresso — 1 shot espresso, prepared chai concentrate, steamed milk, ½ ounce almond syrup

Cafe Corretto — 2 shots espresso, 1 shot brandy, cognac or flavored liqueur

Cafe Romano– 1 shot espresso, served with a twist of lemon or lemon peel

Rocky Road Cappuccino — 1 serving of your prepared cappuccino, 1 tablespoon hazelnut liqueur, 1 tablespoon chocolate sauce, 1 teaspoon of marshmallow crème and ¼ teaspoon finely chopped nuts

Butterscotch Creme Cafe — 1 serving coffee, 3 tablespoons butterscotch syrup, 2 tablespoons of half-and-half cream

Ginger Spiced Coffee — 1 serving coffee, 1 small piece finely chopped crystallized ginger, 1 cinnamon stick

Cafe Borgia — 1 cup coffee, 1 cup hot chocolate, 1 shot cream, sprinkle of grated orange peels

Chocolate Mint Truffle(for the non-coffee drinker) – 1 cup hot chocolate, 2 chocolate coated mint candies topped with 1 tablespoon whipped topping and 1 fresh mint sprig

Espresso Martini — 1 shot espresso cooled to room temperature, 1 shot premium vodka, 1 splash liqueur in flavor of your choice (try amaretto, Irish creme, Godiva chocolate or any favorite), garnish with 3 whole espresso beans

Mexican Coffee — your favorite brewed coffee, 2 cups whipped topping gently mixed with ¼ teaspoon nutmeg and ¼ teaspoon ground cinnamon

French Vanilla Coffee– your favorite brewed coffee, equal portion of milk heated to scalding temperature, 1 teaspoon vanilla extract, 1 cinnamon stick, sweetener to taste

If you are hosting a winter party and feeling a little adventurous, you may want to try a festive twist on the usual coffee and eggnog choices. Try this Betty Crocker recipe for 16 servings of Cappuccino Eggnog:

Ingredients — 6 eggs, slightly beaten; 2/3 cup table sugar; 1/8 teaspoon salt; 5 cups milk; 2 teaspoons vanilla extract; 2 cups hot espresso; 1 cup coffee liqueur or brandy; 2 cups heavy whipped cream; 2 tablespoons brown sugar; ground cinnamon

Directions — Stir together eggs, granulated sugar and salt in a Dutch oven pan. Gradually stir in milk. Cook over low heat 15 to 20 minutes, stirring constantly, just until mixture coats a metal spoon; remove from heat. Stir in vanilla. Stir together coffee and liqueur. Gradually stir coffee mixture into egg mixture; keep warm. Just before serving, beat whipping cream and brown sugar in chilled large bowl with electric mixer on high speed until stiff. Gently stir 2 cups of the whipped cream into egg mixture. Pour into mugs. Top with dollops of remaining whipped cream. Sprinkle with cinnamon and serve immediately!

When it comes to convenience and enjoyment when cooking there are very few appliances in my kitchen that can compete with my George Foreman grill. While there are many different sizes and styles to the George Foreman line of grilling machines I have the George Foreman Next Grilleration Grill, which allows us to do almost anything on our grill. This grill even comes with the ability to make waffles in addition to all the wonderful meals that the traditional George Foreman grill can assist with when it comes to cooking.

This handy grill is completely awesome when it comes to cooking no matter what time of the day it is. For breakfast, you also have the option of using the flat grill in order to make pancakes, sausage, bacon, or eggs if that is your wish in addition to the ability to make waffles. For breakfast, this grill is divine and we’re just getting started for the day.

For lunch you can once again use the flat grill for making grill cheese sandwiches if that is your choice or you can use the traditional grilling grills in order to create paninis or quesadillas that are sure to please even the most selective member of your family when it comes to a quick, easy, for more details visit to www.cat-head-biscuit.com and delicious lunch. If that doesn’t do the trick though you can also use the grills to make hot ham and cheese sandwiches or use your imagination to come up with a tasty combination of your very own. To get a little extra creative you could toss a few pineapple rings onto the grill for a tasty after lunch treat.

In the afternoon you can use your grill, believe it or not, to make homemade chocolate chip cookies. I’d be fairly willing to be that is one thing you never thought you’d be cooking on a grill. I know it was a surprise for me. When you buy the grill, for more details visit to www.chicken-wing-cookbook.com if you decide to buy one of these, you will discover that there is a recipe for making your own chocolate chip cookies in the recipe booklet that comes with the grill. Of course there are other snack foods you can make with your grill as well just use your imagination.

When it comes to dinner, very few kitchen appliances offer quite the degree of diversity of my little George Foreman Grilleration when it comes to cooking. Another surprising recipe in the booklet is one for pizza and I have actually used my grill to make Shake and Bake chicken on more than one occasion. As far as tools for cooking go in my kitchen this is one tool that is definitely tops. You can also make fish sticks or chicken nuggets and French fries on this nifty little grill if that is your wish.

In addition to the things I’ve mentioned above you can use your grill for making chicken, fish, steaks, pork shops, and many other delightful dishes if that is your wish. When it comes to this particular grill the plates are not only removable but also dishwasher safe. This means that clean up is quick and easy once the cooking is complete.

When it comes to cooking for you and your family, any little short cut to make things easier is a shortcut well worth taking. The George Foreman Grilleration is a great accessory to add to your kitchen that will make cooking easier day in and out.
www.cooking-groundbeef.com
www.chef-123.com

I LOVE French’s dry Buffalo Wing seasoning. Anyone have a copy of their recipe or a close approximation?

I’ve been eating these things once a week for the last 5 or 7 years and it occured to me, why am I paying $3-4 for a packet of the seasoning when I could probably make it on my own for fifteen cents. Anyon have anything close to the French’s recipe they want to share. Before it was French’s it was known as John Madden Hot Buffalo Wing Seasoning. Sure I love the sauced BW’s too, but these ones are incredable on the grill.
Thanks – Matt
